At our peak, Southwest Mushrooms produced 1,500-2,000 blocks monthly. Under 2% contamination. $30,000-45,000 in monthly revenue. Restaurants, farmers markets, grocery stores.... we supplied them all.

I documented everything. Every protocol. Every formula. Every system that worked \(and the ones that didn't\).
